It shows the full ripeness of the vintage, with a rich array of blackberry, cassis, cherry, chocolate and caramel flavors. But it wisely preserves structure with fine acidity and a complex tannic architecture. Should develop well over the next 10 years. (12/1/2007)

• Since 1990, all Vine Cliff vineyards have been managed according to the principles/practices of sustainable viticulture, with a renewed emphasis on natural farming. No commercial pesticides/herbicides /artificial fertilizers have been used, when possible, on the vines for more than a decade. 10 tons of organic materials are returned to the soil as compost annually. Native grass species are planted as ground cover between rows of vines.
• This ecologically complex and diverse biosystem, now established, has resulted in the protection of the wildlife and habitat surrounding Vine Cliff.

• Sundried tomato polenta with herbed tomato-wine sauce and sautéed mushrooms.
• Herb-roasted rack of lamb with a Cabernet sauce.
